Happy Belated Valentines Day all~ Every year I bring in cupcakes to work and I love doing this! No matter if I'm single or in a relationship, I will never despise this holiday. What's wrong about a holiday that celebrates love?! Everyone automatically focuses on the romantic love, but there are so many types of love to express! Like my love for these cupcakes!
Oreo Cupcakes
Recipe adapted from Beantown Baker
Cake:
Cream Cheese Frosting:
Preheat oven to 350F. Insert liners into a medium cupcake pan.
Twist apart 24 Oreos. Place the wafer with filling on it, filling side up, in the bottom of each paper liner. Save 24 the halves to crush for garnishing. Break 12 Oreo cookies in half, save for garnishing.
Open the package of mini Oreos and set into a bowl. Toss with 2 Tbsp flour and set aside.
In a large bowl cream the butter until fluffy, about 3-5 minutes. Add the milk and vanilla and mix to combine.
In a separate bowl mix together the flour, baking powder, and salt.
Add the dry ingredients to butter mixture. Mix until integrated. Stir in sugar. With an electric mixer on low speed, beat for 30 seconds. Turn the mixer up to medium speed and beat for 2 minutes. Add the egg whites. Beat for 2 more minutes. Stir in the quartered cookies.
Fill the cupcake lines three-quarters full. Bake for about 20 minutes or until a toothpick inserted in the center of cupcakes comes out clean. Cool cupcakes in the pan.
Assemble the cupcakes
Once cupcakes have cooled completely, frost with cream cheese frosting. Sprinkle with crushed Oreos and place 1/2 of an Oreo on the frosting of each cupcake.

I really didn't change the recipe, I just added to it. I I've made this at least a dozen times now and I've learned something new each time. Now, I'm no expert at baking, so this it just the point of view of a average woman in a kitchen, a with need for cupcakes.
I was given one of these bad boys for Christmas last year, and lemme tell ya, it's amazing! Especially for this recipe. NOW I do not believe you need this for this recipe but if you do bake, a heavy duty mixer will be well used.
When making the cake mixture you will find that it's very dough like at first, this would be tiring to mix by hand; and this is why I love my electric mixer. Once the egg whites are added the batter will become the consistency that you may be used to.
When scooping out the batter I find using this wonderful item helps tremendously; it's just an everyday melon baller. Now if you're like me and you like to lick the bowl when you're finished, be warned: it's not going to taste like your regular boxed cake mixtures. I've found that this cake mixture is very floury and thick but it's supposed to be that way. Why? Because all your favor will be coming from the Oreos and frosting! And you want a strong mixture to hold the Oreo in place at the bottom.
Oh! By the way, I made my cupcakes pink for Valentine's day (if you couldn't tell)!~
The batter once in the liner will look a bit chunky, but I assure you it will bake just fine! You should be able to use all the batter. It takes 20 minutes to bake but my always take 2-3 minutes longer.
Once done baking they will look like this, yours probably won't be pink tho. ;) Let them cool. You don't want to frost warm cupcakes because your frosting will become runny. While they are cooling, make your frosting.
Now, like I said before, I'm just the average women here, trying to make herself some cupcakes. I don't have anything fancy to frost with but I have a nice trick (that everyone probably knows already) that makes frosting look "professional" and will be less messy all around. Bag all your frosting and...
push it all to one corner like this. Once you're ready to frost, cut the tip of the corner of the bag. The length of your cut it will control the size/shape of your frosting. I like bigger, fuller swirl, so my cut is longer! Once frosted, add your cookie halves and sprinkle the cookie bits for garnish!
All done! Mmm, I could just eat the picture~

- 2 tsp vanilla extract
- 2 1/4 cups flour, plus 2 Tbsp for the mini Oreos

- 1/2 tsp salt
- 1 2/3 cup sugar
- 3 large egg whites, at room temperature
- 1 package Oreo Cookies (if using "double stuffed" get 2 packages)
- 1 package of Mini Oreo Cookies
- double batch of cream cheese frosting

- powder sugar to taste (about 1-2 cups)
